What's The Difference Between The Classical Hinge and Air-hinge System?

Good question! If you are going to make a table for your Auplex BBQ cooker, you need to know which hinge type you have in order to know what the distance should be between the lower shelf and the table top. Here are some photos to help you determine what type of hinge you have.

This photo shows the Air-hinge System on an Auplex BBQ kamado. It allows the lid to stop at any Angle. If you can stop the lid at any Angle, you are using a kamado with the Air-hinge System.

These photos show the classical hinge on Auplex BBQ kamados. This hinge can also be added with a cover, which may be difficult to distinguish from the Air-hinge System. Note that if your kamado can only stop at its maximum open Angle, it is a classical hinge.

Can I Use Cast Iron Cookware In My Kamado-Style Cooker?

Absolutely! If you are concerned about smoke staining your cast iron (especially enameled cast iron) you can spray a light coating of cooking oil on the outside of the pan which will facilitate easy cleaning of any smoke residue.

Can I Season Cast Iron Cookware In My Kamado-Style Cooker?

You certainly can, since all you really need for seasoning cast iron is oil and heat. However, properly seasoning cast iron is a multi-step process involving three different temperatures. We find it immeasurably easier to do our seasoning in our kitchen oven. Proper seasoning does not generate smoke as many would have you believe so there is no need to do it outside. However, if you do find it desirable or even necessary to season your cast iron outdoors in your kamado-style cooker, we would do the first two steps (heat to 200°F and add the oil, heat to 300°F and wipe all the oil off) indoors with your oven. Then you can take it outside and do the final seasoning (bake at 400-450°F) in your cooker.

Another reason that we would avoid seasoning cast iron outdoors in a barbecue cooker is that you must be careful about allowing ash to get on the seasoning oil before it polymerizes. You don't want any foreign materials or particles getting into your seasoning and possibly interfering with the polymerization process.

What Is A Heat Deflector?

There is no such thing as a "place setter" or "placesetter". The actual name of the accessory being referred to is "plate setter". At AUPLEX BBQ, we usually refer to it as a heat deflector.See below.

The Heat Deflector is an essential accessory for any Kamado-style BBQ grill. Made from high-quality ceramic, it sits between the charcoal and the cooking grid to create an indirect cooking zone. By blocking direct flames and diffusing heat evenly, it transforms your grill into a convection oven — perfect for low and slow cooking, smoking, baking, or roasting.

You can use it in two different positions, legs up and legs down. The first photo below shows the Heat Deflector legs down ready to be used for cooking pizza. You would simply place the pizza stone on the Heat Deflector and now you have accomplished two things. First, you have an additional layer of ceramic between the pizza and the fire which allows for better temperature regulation and fewer burned crusts. Second, you have raised the pizza stone up to the level of the opening of your cooker which allows you to use a peel to slide the pizza in and out of the cooker with ease.

The second photo below shows the Heat Deflector legs up for indirect cooking. As you can see, you can place a drip pan on the Heat Deflector and then put the grid on the legs of the Heat Deflector to hold the food.
